Bacon Blue Cheese Potato Salad. There is nothing bad going on in that description, no? Except for a few calories, but you don't get compliments on bringing the healthiest dish to these things, now, do you?
I found this recipe on Food.com and can check it out if you are interested in fat grams and calories and stuff like that.
2 1/2 lbs red potatoes, cut into eighths
5 slices bacon
1/2 cup mayonnaise
1/4 cup sour cream
1 TBL vinegar
1/2 tsp salt
1/4 tsp pepper
4 green onions, chopped
3 ounces blue cheese, crumbled (about 3/4 cup)
Boil potatoes until tender. Cook bacon until crisp, then cut into one inch pieces. In a bowl, combine mayo, sour cream, vinegar, salt and pepper. Fold in green onions, cheese, potatoes and bacon. Can be served immediately, or keep refrigerated until ready to serve.
